- Highlights: Ambient temperature had significant influence on starch biosynthesis enzymes and composition of starch in wheat grains. Amylopectin to amylose ratio was altered in WH 730 but not in K 7903 and RAJ 4014 under late sown condition. Amylopectin to amylose ratio was reduced from 3.0 under normal condition to 1.9 under late sown condition in WH 730. This study offers an alternative approach to alter starch composition by growing wheat crop at desirable temperature ranges.
