Abstract

ABSTRACT: Chronic food insecurity in childhood impacts health and academic achievement across the life course. We describe the development of a brief self-report nutrition literacy survey to assess knowledge, attitudes, and intent in a sample of 482 elementary students at high risk for food insecurity. Confirmatory factor analysis revealed two latent factors: food attitudes and nutrition knowledge. Item difficulty ranged from 25% to 94% and an adequate Kuder-Richardson20 of 0.7 was observed for knowledge items. Temporal reliability was assessed using intraclass correlation coefficients from a subset of 46 students ( p < .05). The survey demonstrates appropriate initial psychometric qualities with low respondent burden.
