Abstract

Abstract: Sodium caseinate was chosen as the material to construct a kinetic model of extensive hydrolysis of casein to regulate casein hydrolysis. The theoretical and actual values matched well, which indicated that the model was reasonably constructed, but did not have widespread applicability being a constrained enzymatic hydrolysis system. Subsequently, we used the kinetic model equation to obtain samples with different degrees of hydrolysis by changing hydrolysis conditions. DH and molecular mass distribution corresponding to extensive hydrolysis and partial hydrolysis were obtained. The DH of partially hydrolysed casein was 10%, the molecular mass was mainly 0.2–3 kDa, and large proteins were hydrolysed. The DH of extensively hydrolysed casein was >20%, and the molecular mass less than 1 kDa accounted for 89%. The study quantified the hydrolysis conditions, DH and molecular mass, which can provide a theoretical reference for the targeted production of casein hydrolysates of different degrees.
