Abstract

Translation abstract: Students encounter antioxidants in food, cosmetics or functional food in their everyday life. When treating redox reactions or food additives in chemistry class, antioxidants are usually discussed, but often without creating a motivating context or a profound discussion of the chemical background of the antioxidants. The following experiment combines these chemical facts with the well‐known luminol reaction and the trend of bubble tea. An antioxidant from the olive serves as a model substance, which is produced in large quantities as a waste product in the production of olive oil. Abstract: Vielfach begegnen Antioxidantien Schülerinnen und Schülern im Alltag: In Lebensmitteln, Kosmetika oder in speziellem Functional Food. Bei der Behandlung von Redox‐Reaktionen oder Lebensmittelzusatzstoffen im Chemieunterricht werden Antioxidantien häufig thematisiert, oftmals aber ohne einen motivierenden Kontext zu schaffen und ohne die chemischen Hintergründe der Antioxidantien genauer zu beleuchten. Das hier vorgestellte Experiment verbindet dabei diese chemischen Sachverhalte mit der bekannten Luminol‐Reaktion und dem Trend des Bubble Teas. Als Modellsubstanz kann zusätzlich Hydroxytyrosol, ein Antioxidans aus der Olive, das in großen Mengen als Abfallprodukt bei der Olivenölherstellung anfällt, dienen.
