Abstract

Abstract : In article number 1900818, Raffaele Mezzenga, Laurent Sagalowicz, and co‐workers review the thermodynamics and physics underlying the self‐assembly of amphiphilic lipids. The link to Nature's deployment of these fascinating lyotropic liquid‐crystalline phases and the harnessing of their properties to enable a range of technological, biomedical and food applications are reviewed.
