- Abstract : DOI: 10.1002/sscp.202000033 The cover picture shows a novel HILIC‐ESI‐MS/MS method for the quantitative analysis of fructose, glucose, and sucrose in hard cider and apple juice. The sugar content of hard ciders influences their taste and can vary widely depending on brewing parameters and the addition of sweeteners. Sample preparation consisted of sonication, dilution, centrifugation, filtration, and an additional dilution step. The method was validated and applied to 11 hard cider samples, 1 apple ale sample, and 3 apple juice samples.
