<abstract abstract-type="graphical" xml:lang="en"> <title> <x xml:space="preserve">Abstract</x> </title> <p> <bold>Just a little bit</bold>: The remarkable influence of a small change in the molecular geometry on the self‐assembled structures of the acidic form of sophorolipids (SLs) derived from oleic, elaidic, and stearic acid is demonstrated.
